With the surge of Sparkling sake but still less available in dry style, Shichiken offers range of refreshingly dry but delicate, naturally sparkling (2nd fermentation in the bottle) sake. "Yama no Kasumi" is a slightly cloudy expression, with underlying mineral & soft bubbles.

The wine has been out staple English Sparkling since opening. The selection was based on the team's visit to try the entire range & selected the most matching label to go with our Oamakase. Late harvested parcel of Chardonnay & Pinot Noir contribute to its creamy yet vibrant ripe citrus notes.

Each year, we secure very minimal quantity (usually 3 bottles) of Pinot Noir from Domaine Takahiko, and still offer by the glass to be available for those curious minds. Hailed almost as though Cult wine, the wine of Takahiko Soga now has wide fan base all over the world. His Pinot Noir resembles those of Burgundy, but with touch of unique Umami and hint of Japanese plum.
