Carvón is born from the union of fire and wine. In a warm and carefully designed atmosphere, we work with fresh Mediterranean products grilled over embers and a selection of more than 100 wines, focused on small producers with a unique identity. We believe in an honest, very intimate experience where the kitchen, dining room, and cellar speak the same language.

We have more than 100 references and around 20 wines by the glass. Our menu is completely dynamic and evolves every week with new discoveries and small productions. Thanks to Coravin, customers can access virtually any wine from our cellar by the glass, enjoying unique labels that would normally only be served by the bottle.

G1 Brut Nature – Pérez Barquero (Montilla-Moriles)

100% Pedro Ximénez sparkling wine. Second fermentation in the bottle with native yeast from the G1 flor veil. A unique sparkling wine that combines the world of fortified wines with the traditional method. Very limited production.

Fondillón from Monóvar Solera 1996

One of the great historic wines of the Mediterranean, aged for decades in solera. A unique, almost unrepeatable wine, of immense complexity and Alicante tradition.

Malandrín Superior 2019 - Tinta Fina – VT Zamora

An almost unknown red wine, of very limited production and carefully crafted. Honest, straightforward, and unpretentious, it reflects the purest expression of the Villamor de los Escuderos vineyard.

Sandra has over 20 years of experience in hospitality and wine, working in the United Kingdom and various cities in Spain such as Valencia, Ibiza, Alicante, and Murcia. A shy, professional, and elegant young woman, she was named Best Sommelier of the Valencian Community in 2020 and has been among the top 5 sommeliers in Spain (Top 100 Sommeliers) for three consecutive years. Her passion: Sherry and Champagne.
