LYLA creates a menu utilising the finest line-caught fish and sustainable shellfish sourced from the Scottish Isles. We collaborate with the UK’s top farms to procure organic meats and vegetables, while also maintaining valued relationships with local foragers and growers. Our kitchen invites you to experience an extended tasting menu, bringing the authentic flavours of Scotland to our capital city.

Lyla opened in October 2023 with the aim of offering a luxurious, high-end fine dining experience never seen before in Edinburgh, focusing on sustainably caught fish and shellfish. We offer 220 wines by the bottle and an ever-changing selection of 22 wines, plus 15 sweet, fortified wines and sherries by the glass. Every wine by the glass at Lyla is preserved using the Coravin system, ensuring perfect quality.

Stuart Skea

Stuart has worked as a sommelier for over 18 years and has been with Stuart Ralston’s Aizle Hospitality Group for more than three years, including as part of the opening team at Lyla in October 2023. With a reputation for bold and exemplary wine and food pairings, Stuart has worked closely with Chef Ralston for many years to deliver the best possible guest experience.
