London born Alex Dilling discovered his fond admiration for food from a young age. Alex's first standalone restaurant opened on the 1st Floor of Hotel Cafe Royal - overlooking Regent Street - on 1st September 2022. The restaurant will see Alex deliver the finest ingredients taking inspiration from French classics.

Our wine list celebrates both iconic and undiscovered regions, from Burgundy and Piedmont to Mclaren Vale and Oregon. With 25 exceptional wines and thoughtful pairings, each selection is crafted to elevate every dish. Expect refined classics, hidden gems, and delightful surprises in every glass.

A Champagne with great personality, aromatic on the nose with ripe stone fruits and the typical toasty character.
Rich on the palate with great body and freshness that make it perfect as aperitif or paired with food.

A very elegant Chardonnay and a good alternative to Burgundy.
Fine on the nose with fresh citrus aromas surrounded by notes of vanilla. On the palate the wine is precise with light creaminess, fresh acidity and minerality.

2018 Jean-Michel Guillon, Chambolle-Musigny Au Village, Burgundy, France

Classic Style of Pinot Noir from Burgundy. Complexity and balance make this wine very special; smoky and vibrant red fruits are balanced by fresh acidity while the gentle tannins give great texture and support the very long and delicate finish.

Guiseppe Grasso

Giuseppe Grasso joined Alex Dilling in 2023 after many years of experience in Michelin restaurants.
In 2024, he has achieved the WSET Diploma in Wines and in the same year he obtained the Certified Sommelier qualification from the Court of Master Sommelier Europe.
