Annata is a wine-led dining destination on Sydney’s North Shore, where we thoughtfully pair food and wine to create a refined yet welcoming experience. Led by owner and sommelier John Bligh and Executive Chef Jordon Garcia, we offer a seasonal menu alongside a curated wine list of over 200 bottles, with more than forty available by the glass.

We are known for creating an immersive dining experience where guests are encouraged to explore new flavours and pairings. Through our curated menus, guided tastings, and ever-evolving wine program, we aim to make each visit both memorable and engaging, fostering a sense of discovery and connection around the table.

2022 Domaine Taillandier AOC Savennieres, Chenin Blanc, Loire Valley, France

On the palate, it reveals vibrant acidity and a lively structure, delivering flavours of green apple, citrus, honey, and a persistent elegant mineral finish. The wine is fermented in concrete egg and aged on lees for 9 months, producing a unique and complex wine.

2023 Gorrondona Txakoli, Basque Region, Spain

Aromas of citrus, white flowers, and minerality with wild herbs and white fruit. The palate is a unique combination of freshness and complexity. The flavours are round and balanced, with an expressive open finish. Perfect with raw fish and a great wine to fire up the taste buds. The winemaker and oenologist is Itziar Insausti.

2019 Levantine Hill Colleen's Paddock Pinot Noir, Yarra Valley, VIC

The colour is quite light and evolved for its age, and the bouquet and flavour are mellow and forward developed, but undeniably complex. There are forest-floor, earthy, dried-herb, pomegranate and balsamic herb/Campari aromas galore. Intensity of palate flavour is excellent as is the multi-faceted flavour profile and length of palate. An idiosyncratic and utterly delicious pinot noir. Huon Hooke 96/100

John Bligh

John is a retired technology executive who has always had a passion for fine food and wine. He purchased Annata at the age of 68 because he loved the Chef's cuisine. He then studied wine with the WSET and became a qualified sommelier after successfully completing Level 3 studies. John works closely with his boutique suppliers to curate Annata's continuously evolving Wine List.
