Anima is born from the meeting of Rome and Naples. Two cities, two gastronomic identities, and a dialogue that takes shape in a contemporary cuisine led by Chef Antonio Gentile. Located inside The Rome EDITION hotel, the restaurant offers an elegant yet spontaneous experience, where every detail tells a story of territory, exploration, and conviviality.

Anima’s wine list offers about 13 labels by the glass, including wines and Champagne, selected by our Sommelier. Thanks to Coravin, we can extend the selection to around 20 labels and create custom pairings for our tasting menus, enhanced by the service of Restaurant Manager Benito Colonna, Knight of Champagne.

Montrachet Grand Cru – Louis Jadot | Chardonnay

BENITO COLONNA: Restaurant Manager of Anima and Chevalier de Coteaux de Champagne. He has gained experience at Gordon Ramsay Restaurant at The St. Regis Doha and the Hotel Hassler in Rome.

**AIRES DA SILVA**: Sommelier of Anima. He previously worked at the two Michelin-starred restaurant Il Pagliaccio and the W Rome hotel, now contributing to the selection and management of the wine list.
