Hubert is a restaurant for people who love restaurants. It’s a love letter to the kind of big night out that starts in the bar, takes in a show and lingers long, from Martini and oysters to cheese and Cognac. The wine list is rich, diverse and brimming with examples of the finest low-intervention and avant-garde winemaking the world has to offer.

We offer 55 different wines by the glass, spanning Champagne, white, red, and dessert wines. Thanks to Coravin, we can pour some of the world’s finest bottles, such as Charles Heidsieck Blanc des Millénaires Champagne, Olivier Leflaive Meursault, and Mount Mary Quintet. 2022 Champ Divin 'Soleil Blanc La Martinière', Savagnin, Côtes du Jura, France

Unfined, unfiltered, and full of Jura verve. This biodynamic Savagnin sings with camomile blossom, grapefuit peel, apricot and walnut butter. Raised gently in old wood, it's a pure, living wine. Raw, textural and deeply connected to its marl-rich soils.

2022 Mount Mary 'Quintet', Cabernet Sauvignon Blend, Yarra Valley, Victoria
