Hebe, daughter of Zeus and Hera, had the role in Greek mythology of serving nectar to the gods. Today, HÉBÉ is a table designed to please all epicureans. Ideally located a stone's throw from Notre-Dame church, Hébé is a restaurant for sharing and conviviality. French cuisine, inventive, delicate and seasonal which is found in the different plates to share.

Our wine list has around 150 references. It is developed in collaboration with Stéphane Derenencourt, artisan winemaker and friend. Wine is an encounter and our choices combine respect and passion for the history of men behind this beautiful manual profession. All the subtleties find their happiness with us: It is perhaps a Dauvissat, Montmains or a Faiveley, Vieilles Vignes.

It is a wine with a rare and extremely aromatic grape variety. The Georges Vernay estate is a legendary estate rich in history. This wine is perfectly balanced between richness, freshness and elegance.

Domaine Faiveley, Vieilles Vignes - Pinot Noir Mercurey AOC 2023

As its name suggests, this wine has a natural concentration thanks to the old vines. The Mercurey terroir offers structure and freshness and the estate is a guarantee of constant precision. Without seeking power, this wine is elegant and balanced.

Domaine De Baal - Cabernet Sauvignon, Cabernet franc, Lebanon ORGANIC 2019

A Lebanese mountain wine: simply original. Worked like a Bordeaux but outside of Bordeaux. Produced in an artisanal and organic manner, this wine is spicy, powerful and fresh at the same time.

Passionate about wine, Imad has followed several WSET and EVS training courses. Imad and Stéphane regularly exchange and discuss to add new references that they like to drink and share while freeing themselves from the framework of a traditional wine list.
