Nato a Londra, Alex Dilling ha scoperto la sua profonda ammirazione per il cibo fin da giovane. Il primo ristorante autonomo di Alex è stato aperto al primo piano dell'Hotel Cafe Royal - con vista su Regent Street - il 1 settembre 2022. Il ristorante vedrà Alex offrire i migliori ingredienti traendo ispirazione dai classici francesi.

A Champagne with great personality, aromatic on the nose with ripe stone fruits and the typical toasty character.
Rich on the palate with great body and freshness that make it perfect as aperitif or paired with food.

2021 Gran Moraine, Chardonnay, Willamette Valley, Oregon, USA

A very elegant Chardonnay and a good alternative to Burgundy.
Fine on the nose with fresh citrus aromas surrounded by notes of vanilla. On the palate the wine is precise with light creaminess, fresh acidity and minerality.

2018 Jean-Michel Guillon, Chambolle-Musigny Au Village, Burgundy, France

Classic Style of Pinot Noir from Burgundy. Complexity and balance make this wine very special; smoky and vibrant red fruits are balanced by fresh acidity while the gentle tannins give great texture and support the very long and delicate finish.

Giuseppe Grasso si è unito ad Alex Dilling nel 2023 dopo molti anni di esperienza in ristoranti Michelin.
Nel 2024, ha conseguito il Diploma WSET in Vini e nello stesso anno ha ottenuto la qualifica di Sommelier Certificato dalla Court of Master Sommelier Europe.
