81 Bay, Brighton’s finest new wine bar, offering contemporary cuisine and expertly curated wines in a refined setting. Baix Restaurant, European leaning influence, excellent local produce with a wine list showcasing well known wineries to artisanal producers. Highlighting wines and varieties from around the world, with a prominent Burgundy and Bordeaux listing. 

With 81 Bay only opening this year, our goal was to design a wine list that offers something new and exciting for our guests, and with a 300 bottle wine list and over 30 wines by the glass we feel we have achieved that. We are lucky to have Ghost Rock Wines from Tasmania making our own label 'Baix' Sparkling Rose, Chardonnay and Pinot Noir.
