Head sommelier Thanakorn 'Jay' Bottorff has led the programme since the 2023 opening and pours more than 110 wines by the glass in 75ml and 125ml measures, ranging from grower Champagne and mature Burgundy to biodynamic Alsace, cool-climate Pinot Noir and a thoughtful run of Portugal. Sommelier Andrea Demaria, Diploma-qualified with twenty years on floors across several continents, ranges from Bordeaux and Burgundy through Loire whites, Super-Tuscans and Cabernet Sauvignon to Champagne, with Pinot Noir and Chardonnay appearing in several guises. German Riesling gets a particular nod; an off-dry Spätlese is the staff pick as a match for Thai heat. Older vintages and reserve bottles that would normally demand a full-bottle commitment turn up here by the glass. It is built for the end of the working day, and it shows.

The bar centres on an Enomatic dispenser holding around thirty wines at any moment, with more than forty still wines and a handful of sparklers, three of them Champagne, on the by-the-glass list overall. First Growth Bordeaux sits next to small low-intervention producers; Barolo, Rioja, Ribera del Duero and Margaret River all get a turn. Behind it is a list of around 200 bottles, a front-of-house team certified to WSET Level 2 or above, and, this being Riedel, the right glass for everything. Classic bistro cooking and a terrace over one of downtown Bangkok's busiest junctions complete the picture.

Italy is the point, with Piedmont well represented, and Riesling, Pinot Noir and traditional-method sparkling wine as the supporting cast, plus a scattering of bottles from further afield. The list changes often. Roughly twenty wines are poured by the glass, some from magnum, and the Matteo Correggia Alta Langa is a good place to begin. Daily specials from the kitchen change just as frequently, and corkage is available for anyone who would rather bring their own.

Between thirty and forty wines are open by the glass at any time, alongside more than ten flights, and the cellar behind them runs past 500 labels. Expect low-intervention and biodynamic bottles from cool-climate sites and plenty of off-the-beaten-track names; a Santorini Assyrtiko blend from Sigalas is a typical pour. More than twenty wines are open by the glass and they follow the house pattern of classic Europe, Bordeaux and Burgundy at the centre, Champagne alongside, and Barbaresco leading a considered run of Italian reds. German whites round out the list. Branch manager Cholprathan Panthongkum has spent more than eight years on Bangkok wine floors and steers the room with an easy hand. For a quiet second glass after dinner on Thonglor, it is the obvious place to walk to.

Where the EmSphere original is a bar, this is a restaurant with the wine list at its heart, a chef's menu written to sit alongside it and a cellar of more than 350 bottles. Andrea Demaria oversees both sites, and here he keeps the glass list tighter: roughly 25 to 28 pours, rotated monthly, anchored by Bordeaux and Burgundy and opening with traditional-method sparkling wine that need not be Champagne. Beyond the classics the list wanders deliberately towards emerging producers and less familiar grapes, and the staff are briefed to talk guests through them. Lunchtime meetings and long dinners both work. The setting is glossy and new; the pouring is quietly serious.

At the rear of the Town Hall compound on Sukhumvit 49, tōst 49 was started by three friends with three trades: a chef, a sommelier and a baker. That explains the shape of the day. Daylight belongs to the baker; after dark the same room becomes a wine bar with around thirty pours by the glass. Sommelier Chutikarn 'Bow' Songpum organises the list by music genre rather than region, so a page of Jazz might sit beside Disco and Hip Hop, and nearly everything comes from small organic or biodynamic growers. Champagne features, and there is a proper run of sweet wines to finish on. The side street is quieter than Thonglor's main drag, which suits a place founded on the idea that nothing worth having should be hurried. The wine list is written to that tempo.

Star Wine List describes the room turning into something close to a party as the night goes on. The wine list is short and French, built on Burgundy, Bordeaux and Alsace with a few stranger bottles slipped in. Eighteen wines are poured by the glass, and Lavergne will open things most restaurants keep for full bottles, a 2017 Dom Pérignon and a 1995 Côte-Rôtie among them. Up on the sixth floor of an unremarkable former industrial block in Talad Noi, Charmkrung is the second restaurant from chef-owner Jai and the team behind Charmgang. Sommelier Kiki Sontiyart came to wine from the kitchen, having cooked with David Thompson at Aaharn in Hong Kong, and it shows in how the list is assembled. Around 150 bottles mix classic benchmarks with natural wines, all chosen to stand up to chilli and fish sauce: Alsace and German whites, Loire and Rhône reds, pét-nat, sherry and a rotating dessert wine.
