Hidden on Amsterdam’s Keizersgracht, Vinkeles is an intimate fine dining destination where heritage and refinement meet. Set in an 18th-century bakery, it offers understated luxury and historic charm. Executive Chef Jurgen van der Zalm presents layered, elegant creations where classical craftsmanship and modern flair come together in a culinary journey of precision, contrast, and pure flavour.

The Dylan’s wine list is compiled with love and care by our Sommelier's Jasper van Amerongen & Virginie Kühn. Wines from all over the world with the majority from the European wine-growing countries. Wines from famous Chateau’s, renowned and award-winning producers. But also wines from less known areas and young producers with a different view of winemaking are listed.

Riesling ‘Eyra Brut Nature’, Domein Aldenborgh

This Dutch Sparkling Riesling is made with the with the utmost respect for the vineyard and environment. This creates a exciting, bone dry and mineral driven sparkling wine which is among the best of Dutch Sparkling wines on the Market.

Spätburgunder ‘Marbleous’, Tobias Feiden

The wine is pure, light, elegant and almost fragile, but yet serious because of the herbal tones, spices and the slate like fruit character. The oak aging is really well balanced, there is no filtration and partial de-stemming to create this wine.

Umeshu 'Kakurei Junmai Ginjo', Aoki Shuzo

The cheese platter is always a challenge for wine since you have to deal with many different flavors. When we where looking for something surprising and fun to serve with the cheese we discovered this Sake. Sake is a infusion Junmai Ginjo sake with carefully selected plums from the Niigata region. To keep the taste of the Junmai Ginjo sake, the right amount of rock sugar is used to create an elegantly sweet plum wine.

MEET THE WINE EXPERTS

Jasper van Amerongen & Virginie Kühn

Jasper started his journey in Vinkeles back in 2018. After completing several wine educations he became part of the sommelier's team in 2022 to be responsible as of 2024 wine related tasks in the hotel.
Virginie joined the Vinkeles team in 2022. After showing a lot of interest and passion about wine Virginie started and completed WSET Level 3. As of 2025 she became part of the sommelier's team.
