Designed with the kitchen as its focal point and wine in its DNA, husband-and-wife team Paul & Charlotte Durand have made Manifest a casual fine-dining restaurant, offering both counter dining and six spacious tables. Warm and hospitable service, alongside boldly flavoured, skilful dishes paired with excellent wines from independent, small-scale producers, all come together in a relaxed and friendly atmosphere.

Our wine list is organised into two sections: Heroes, where we celebrate classic regions, grapes, and producers; and Punks, where we feature great producers off the beaten track or unusual varieties, with sustainability as a core principle. Karen and Charlotte work to find exceptional bottles offered in limited amounts to add to our ever-evolving Coravin list and our cellar for future wine lovers.

The 2008 Koehler-Ruprecht Kallstadter Saumagen Riesling

I was excited to pull this wine from the cellar, as it pairs perfectly with a lobster dish on our tasting menu. It’s beautifully mineral and complex, drinking exceptionally well, and the 2008 vintage is rare. An off-list special pairing.

Granville Basalt Pinot Noir 2023

Lucky enough to snap up a few cases, we’ve cellared some and also have a few as by-the-glass specials. This is simply delicious - a perfect food wine, textured and layered, yet fresh. It sold out incredibly quickly on trade for good reason, and I believe it’s one to watch!

Szóló Aszú 2017

I like championing female winemakers, and this Tokaji is exceptional, with a velvety yet elegant texture and a remarkably intense nose. It’s a beautiful expression of place and time, a joy to discover, and capable of elevating the end of any meal.

Karen Ford

Karen has over 15 years of experience working in hospitality and as part of successful wine teams. She honed her craft at L’Enclume, qualified through the CMS & continues furthering her knowledge with the WSET. With prior restaurant management & retail experience working in a wine shop she brings a wealth of knowledge. Her focus is delivering premium service to help guests discover wines they will truly enjoy.
