L’Atelier de Joël Robuchon Miami, run by The Bastion Collection in the Design District, blends Japanese sushi counters and Spanish tapas style service with Modern French cuisine. Its 34-seat counter faces an open kitchen. Led by Executive Chef James Friedberg, it has held two MICHELIN Stars since 2022 and is South Florida’s only two-starred restaurant, serving classics and seasonal dishes.

We pour 35 wines by the glass, plus a sake and two half-bottle Champagnes. The list regularly changes, but is rooted in France, but its depth in rare, aged pours sets it apart: nearly half is sweet, fortified, and oxidative wines, from Jura Vin Jaune to a 1969 Mas Amiel Maury and a 2005 Château d’Yquem. Reserve pours in 3oz or 5oz include Biondi-Santi Brunello and a 2004 Clos Joliette Jurançon.

Henrique Castillo

Henrique is Head Sommelier at Michelin-starred Le Jardinier and L’Atelier de Joël Robuchon, with The Bastion Collection since 2018. With 20 years in hospitality, he studied at NYU and holds an ICC Sommelier Diploma and Court of Master Sommeliers certification. He worked harvests worldwide during five years at Hakkasan group, hosts tastings and classes, and helps collectors curate their cellars.
