Set within the rolling South Downs at Wiston Estate, Chalk offers a relaxed yet refined dining experience celebrating Sussex’s seasonal produce. With hyper-local ingredients, thoughtfully crafted menus, and estate-grown wines, it reflects the land’s heritage, sustainability, and sense of place.

We offer around 22 wines by the glass, most featuring our own sparkling range with grapes grown on the estate. Using Coravin, we can also serve single glasses from our exclusive Library Collection, including gems like The Wiston Estate Blanc de Noirs 2014 Extra Brut, letting guests enjoy rare vintages without opening the bottle.

Bright notes of tangerine, honeydew melon, and honeysuckle, layered over delicate brioche. Fresh acidity carries through to a long, rich finish. Exclusive to our estate and limited in quantity, it’s a superb showcase of our winemaking style.

Wiston Estate Rosé 2018

Bursting with raspberries, blood orange, and red cherries, complemented by a subtle hint of vanilla brioche. Elegant and complex, with a long, creamy finish that lingers on the palate.
