Acquolina chooses the Mediterranean as its territory. Its cuisine is born from the search for exclusively Mediterranean products, selected along all its shores and interpreted through a contemporary sensibility. We define the Wine List as cultured and dynamic, alternating between great names and small producers. We pay attention to native grape varieties and the enological culture of the Mediterranean.

The by-the-glass selection includes 40 different wines, primarily focusing on Italian and Mediterranean native grape varieties, chosen to highlight the characteristics of various regions and create a precise dialogue with the dishes.

Vintage champagne of great elegance and depth, produced exclusively in the best years. Rich and full-bodied, it expresses notes of ripe fruit, citrus, sweet spices, and delicate toasted nuances. On the palate, it is broad and creamy, supported by a pleasant freshness and a significant structure, with a long, mineral, and persistent finish. A refined and gastronomic interpretation of the Bollinger style, already very enjoyable but capable of magnificent evolution over time.

Good morning, Cenatiempo 2023

Kalimera 2023 by Cenatiempo is an expressive and Mediterranean white wine, able to elegantly convey the volcanic character of Ischia. On the nose, it offers aromas of citrus, white flowers, and Mediterranean herbs, accompanied by a pleasant minerality. On the palate, it is fresh, savory, and dynamic, with a delicate yet persistent texture and a distinctly salty finish. A territorial and gastronomic wine, with an authentic and refined interpretation.

Margelina, Zambartas, 2020

Margelina 2020 by Zambartas is an elegant and Mediterranean red, an authentic expression of the Cypriot terroir. On the nose, it presents notes of ripe red and black fruits, delicate spices, aromatic herbs, and balsamic nuances. On the palate, it is balanced and enveloping, with well-integrated tannins, a pleasant freshness, and a long, spicy finish. A wine of character, refined and deeply connected to its land of origin.
