Our cellar, with more than 5,600 references and over 12,000 bottles, invites you to take a journey through the world of wine. Our tasting menu Cellarium offers a constant dialogue between cuisine and wine, between tradition and innovation.

Surrounded by vineyards and with the Peñafiel castle on the horizon, thanks to Coravin we can offer more than 120 references by the glass from our winery's collection of over 5,600 references from 49 wine regions across 9 countries, served in more than a dozen glass models from brands like Riedel, Zalto, or Spiegelau, including icons such as Château d'Yquem 1981 or Rostaing La Landonne 2010.

Fernando Moret

Fernando Moret leads Ambivium after heading its dining room and sommellerie team. A Master in Sommellerie from the Basque Culinary Center, he has been a sommelier at the establishment since 2021. Awarded the July Soler Talent and Future of Wine 2025, Certified Court of Master Sommeliers, Best Sommelier of Alicante (2022) and Valencia (2023), and one of the Top 5 Young Sommeliers 2024, he remains in the Top 100 Sommeliers Spain 2026.
