Disznokö Aszú Eszencia 2007

Free-run juice of Aszú berries affected by noble rot, results in an intensely sweet wine. As if caramel, maple syrup, honey, and Demerara sugar all combined into the ultimate dessert syrup. I encourage guests to add this dessert wine to their creme brulee. This is the highest classification for Tokaji wines and fermentation can take up to years to accumulate a sobering 1% ABV. If Tokaji is the wine for Kings Aszú Eszencia is for the Gods.

This Sauvignon Blanc has always stood out for me in terms of quality. Everything is in balance and the aromas on this wine are well pronounced. Standing out from the crowd, the pyrazines in this wine are zesty and present as Jalapeño! In fact, It is prevalent that we don't even need to freeze jalapeños for our wine, it's been in there for years.
