At The Paddock Restaurant, our story is grounded in the land on which we sit. Estate-grown produce, seasonal menus, and a paddock-to-plate ethos filter through to our wine program: a strong focus on Australian makers, an adventurous by-the-glass offering, and a curated Coravin selection of global benchmarks for guests to explore.

At The Paddock Restaurant in the Gold Coast Hinterland, many guests make the mountain drive to dine. With most travelling by car, this created the need to offer exceptional small-format bottles and a premium by-the-glass corovin offering extending to selections from China, Vietnam, Italy & France that sits alongside a hatted food experience.

Devaux Coeur des Bar Blanc de Noirs

A beautiful brioche and buttery example of an approachably priced Champagne by the glass under Coravin. Lesser-known Champagne house that well and truly punches above its weight and pairs wonderfully with seafood.

Silver Heights ‘Last Warrior’ White Blend

A beautiful approachable and balanced example of white wines coming from China at the moment. Silky smoth and a blend of 70% Chardonnay 30% Sauvignon Blanc in French Oak Barrels, its soft and elegant with just a hint of fresh acidity coming through.

Torbreck 'The Struie' Shiraz

A perfect and elegant example of top-shelf Barossa Shiraz. Pairs perfectly with red-meats and is silky soft on the palate with a long finish that holds the spice and pepperiness of a classic Shiraz from this region.

Our wine team brings experience from leading Australian dining rooms and vineyards, with a shared focus on thoughtful curation and guest-led service. The wine program, lead by Sommelier Sam Holman, the team are well-versed in degustation-paired wines by the glass with a particular focus on lesser-known Australian producers.
