The Collective in The Rocks offers a diverse and carefully curated wine list, where expert sommeliers guide guests through iconic regions and hidden gems, paired with a seasonal menu crafted to complement every glass. At its heart, The Dining Room delivers fine dining that blends modern sophistication with Sydney’s historic charm, accommodating up to 350 guests for celebrations and events.

The Collective showcases over 40 wines by the glass, of which 14 through Coravin, offering guests the chance to explore rare and iconic labels without committing to a full bottle. Curated by a team from around the world, the list celebrates both their diverse perspectives and the beauty of iconic Australian wines, spanning a wide mix of styles and regions.

NV Larmandier-Bernier ‘Longitude – Blanc de Blancs’ Côte des Blancs, Champagne

A grower Champagne, crafted from 100% Chardonnay. Vibrant and mineral-driven, with delicate citrus, white flowers, and a refined, persistent mousse. Elegant and expressive.

2014 Semillon, Brokenwood ‘ILR Reserve’, Hunter Valley

A beautifully aged Hunter Valley Semillon, showing honeyed lemon, green apple, and flinty minerality. Its 9 year development brings depth, vibrant acidity, and a long, textured finish.

2005 Grenache, Château Rayas ‘La Pialade’

A legendary, mature Grenache from one of Châteauneuf-du-Pape’s most famous producers. Shows complex red berries, dried herbs, and silky tannins, with remarkable depth and elegance after nearly two decades of aging.

Hanna Brugnolli

Hanna is a Brazilian-born sommelier with 7 years at Hunter St Hospitality, including 6 at Rockpool Sydney, where she honed her expertise in premium wine service. She is now Head Sommelier at The Collective, curating a dynamic wine program that blends international styles with iconic Australian labels. Hanna is pursuing the WSET Diploma and is an active member of the Sommeliers Australia Committee.
