Slim’s is a glamorous American steakhouse at Bal Harbour Shops, created by restaurateur Stephen Starr and inspired by the elegance and sophistication of Hollywood’s Golden Age. The restaurant combines the feeling of a classic 1930s–1940s supper club with a modern Miami sensibility, plush leather banquettes, rich textures, dramatic lighting, marble floors, and Art Deco–inspired murals.

We pour 26 wines by the glass, including Sommelier Coravin selections that allow us to showcase more prestigious and allocated wines. Burgundy,Bordeaux, Champagne, Piedmont, Tuscany and Napa are strongly represented. Our Coravin program gives guests access to wines such as Aubert, Pio Cesare, Caymus, Nickel & Nickel without committing to a bottle.

Aubert 'East Side', Russian River, CA 2024 chardonnay

If you love Chardonnay, this is something special. Aubert is one of California’s most sought-after Chardonnay producers. It’s rich and luxurious, but beautifully balanced, and having East Side available by the glass is a great opportunity to experience a highly allocated wine without buying the whole bottle

Pio Cesare, Piedmont, Barolo IT 2021, nebbiolo

If you want to experience classic Barolo, this is a great choice. Pio Cesare is one of Piedmont’s historic producers, and 2021 is an excellent vintage. It’s elegant and structured, with beautiful red fruit, roses and spice. Being able to enjoy a Barolo of this caliber by the glass is pretty special, especially with steak.

Castello di Monsanto, ‘Chianti Riserva’, IT Tuscany 2021 sangiovese

If you enjoy classic Italian wines, this is a beautiful Sangiovese from one of Chianti Classico’s benchmark producers. It has bright cherry fruit, savory herbs and great acidity, so it’s very food-friendly. The 2021 vintage has both freshness and structure—perfect with steak or our $100 cheesesteak sandwich
