Selby's is a premier fine dining restaurant in Atherton, CA, that has been captivating guests since it's opening in 2019. It quickly gained acclaim, earning and retaining a Michelin star since 2021. In our opinion the perfect way to kick off a dinner with us is to begin with Champagne. For those who don't want to do a whole bottle, The Krug Grand Cuvée blends a base vintage with an orchestration of older vintages (on some cuvées up to 30 years old) which makes for an always distinct and consistent beverage. It really is the perfect way to get the tastebuds dancing. Whether it be with our luxurious caviar flight, abalone, or just a tasty aperitif in the bar - Krug is always a great choice!

Domaine Economou (Oikonomoy), "Phi", Assyrtiko, Crete 2015

This is a rich and delicious wine from a grape that is native to Greece. The island of Crete is where Yiannis Economou restored his family's vineyards and has turned the winery into one of the most pure and sustainable wineries in the country. The wines are held back and aged with longer aging, this provides notes of bruised apple and sea salt - making it a stunning pairing with butternut squash, pepitas and other fall flavors.

Hirsch Vineyards, West Ridge, Pinot Noir, Sonoma Coast 2022

Hirsch really nailed it with this. It's bright ,ethereal and super energetic. Given the vineyard's proximity to the Pacific, on the North-South ridgeline, this wine barely gets up to 12.5% ABV. It is plug and play for a pairing we might assume only Burgundy could fill. Currently it is our go to for anyone ordering our Bacon-wrapped Cornish Hen, Forbidden Rice, Vaudouvan and Sauce Capitan. The soft-tannin holds up to the Hen perfectly while complimenting the herbaceous notes.
