Rutz started with a glass, not a plate. Founded in 2001 by Anja and Carsten Schmidt with sommelier Lars Rutz as a wine bar in Berlin-Mitte. Wine came first here, and it has remained so. Marco Müller's cuisine and Sebastian Höpfner's wine pairings at Rutz are not separate disciplines, but the same signature expressed in two languages. Berlin’s only three-star restaurant.

14 positions open — and a decision in each. High-quality sparkling wines. German rarities and characterful Rieslings. The peak of reds with great Bordeaux and Burgundies. Sebastian Höpfner’s menu follows no repertoire, but a principle: what usually only the bottle permits may stand in the glass.

Sebastian Höpfner

Sebastian Höpfner is one of Germany's most distinguished sommeliers. After positions at the Steigenberger Frankfurter Hof and Taubenkobel in Austria, he has been responsible for the wine list at Rutz as well as the beverage pairings, both alcoholic and non-alcoholic, since 2025. His approach: respect for the classic world of wine, curiosity about new styles, and a special love for Austria.
