Merchants 1688, located in Lancaster, boasts a rich history that dates back to the late 17th century. The building’s historic architecture reflects its heritage, showcasing stunning period features such as the three old wine vaults. Over the years, Merchants has evolved from a commercial hub to a beloved wine bar and restaurant, merging contemporary dining with a nod to its storied past.

Our wine list balances classic regions with more adventurous, lesser-known producers, with over 30 wines by the glass and an extensive bottle range. Guided by two sommeliers and a trainee, you can explore with confidence.
The actual venue is inside a 17th century wine cellar offering the perfect setting to unwind, immerse yourself in history, and enjoy a carefully selected glass of fine wine.

Pinot Gris 2021- Scotchmans Hill

The grapes for this wine are grown in Geelong, Australia in self mulching black verosol derived from tertiary basal. The cool maritime climate adds a tight minerality to the complex nashi pear, lemon zest and spice flavours with a creamy mid palate and light oak finish.

Rioja Vega Gran Reserva 2011, Anadas Miticas

This is only the third time that Rioja Vega have released their Anadas Miticas (mythical vintage), after the memorable 2005 and 2008 vintage releases. Bright cherry red in colour, an elegant bouquet of toasted balsamic with great complexity and ripe black fruit. A long persistent finish and firm round tannins.

Classic Cuvée 2019, Roebuck Estate

An elegant wine displaying delightful notes of baked apples and ripe citrus fruits layered with a biscuity richness and delicious hint of sweet spice. Aged to perfection, pale-golden and sparkling. Crafted from a hand-picked blend of Chardonnay, Pinot Noir, and Pinot Meunier.

Joel Mcgruddy

Joel has been the assistant manager of the Merchants for 10 years and brings a deep passion for wine. He completed his Level one sommelier in 2023 and achieved a distinction in Level two in 2025.
Alongside General Manager Leanne, who also holds a Level two Award in Wine, he curates the wine list and pairs it with the regularly changing food and the tasting menus.
