In August 1992, Joël FLEURY took over the management of the establishment. He was later joined in 1998 by François BROSSARD. For over 30 years, they have maintained a level of excellence, making this place a great Parisian brasserie, highly sought after by both French and international clientele. The cuisine celebrates the flavors of traditional French cooking with refinement.

The by-the-glass wine list at Le Grand Colbert showcases a fine selection of French wines, ranging from great classics to more exclusive discoveries. Crisp whites from the Loire, reds from Burgundy or the Rhône Valley, rosés from Provence, and elegant champagnes delicately complement the traditional cuisine. This offering is designed to allow for refined food and wine pairings.
