Cabernet Sauvignon, Hawk and Horse, Red Hills, Lake County, CA    2010

I personally love this wine for many reasons but here's a few. The wine is biodynamically farmed by Mitch Hawkins in a smaller appellation, Lake County,  just north of Napa. Its a small wine production of around 3,800 cases per year which Mitch handles with the out most attention to detail. We coravin his 2010 cabernet sauvignon not only by the glass but in our Cab is King wine flight and it always the guests favorite out of all the cabs in the flight.

Champagne, Piper-Heidsieck, Cuvée 1785, Brut, Reims, France    NV

I always enjoy a nice glass of champagne with any course of dinner and Piper-Heidsieck is a great champagne house. I find it a privilege being able to carry this wine by the glass. I love that it is predominantly made from red grapes with a touch of chardonnay. I find it fleshy with beautiful brioche note, on the palate I get this delicious yellow apple characteristic.

Saint-Joseph, Jean-Louis Chave Sélection, "Offerus", Rhône Valley, France    2023

Another house favorite is made from Rhone Valleys most iconic wine producer, Jean-Louis Chave. Although this is not his Hermitage, this 16th generation winemaker makes Offerus 100% Syrah from land he owns and tends to in Saint- Joseph. I feel like we are able to give our guests a part of a family wine making dynasty at an affordable price.

Erick has worked at La Cave for 10 years and has been running the wine program for the past 3.5 years. He started his wine journey under Justin Moore MS. The wine bug bit him and he passed his intro. He considers himself a wine student who is always learning and growing, constantly sharing his passion and knowledge with guests.
