BiBi is an award-wining restaurant led by chef-patron Chet Sharma. It is a progressive restaurant serving dishes inspired by ingredients and memories from the Indian subcontinent. BiBi draws on the years Chet has spent cooking and sourcing ingredients for some of the most esteemed Michelin-starred restaurants in the world, whilst also embracing the full multicultural span of Indian cuisine.

BiBi's wine list has recently undergone a dramatic transformation, from a humble 60 bin list to a much more ambitious list of closer to 200 wines including 27 wines by the glass.

Each wine is chosen carefully to compliment the Indian flavours in the menu, whilst no region is overlooked, producers, cuvées and vintages are sensitively considered when building the list.

Bodegas Tradición Amontillado

This is maybe my favourite wine in the world, I've got a real soft spot for sherry and I think Tradición make the most thought provoking and ethereal wines. They pioneered the VORS classification and specialise in very aged expressions of sherry - this Amontillado is not only stunning, but it is also an incredible pairing with our Indian flavours.

2020 Alkina Night Sky (GSM)

When living in Australia I became very familiar with this producer, which still flies under the radar in the UK. Pedro Parra (soil expert) consults on the project, based in Barossa with some old vines planted on the estate back in the '50s. It's a modern take on Barossa, it's elegant, hardly sees any oak, and has amazing texture - I stayed at the winery a couple of years ago and what they're doing is seriously special.

2011 Château d'Yquem Sauternes

This needs no introduction, but I'm very excited to be able to pour this by the glass - not just from the most revered producer in the region, but quite a special vintage. 2011 was exceptional, being compared to the legendary 2001 vintage it's perhaps one of the single best examples of d'Yquem made so rather exciting to pour it BTG at BiBi

Wilem Powell

After graduating university with a theatre degree, Wilem quickly u-turned and threw himself into the world of fine dining, three years at The Clove Club (2 Michelin stars) before working at Moor Hall (3 Michelin Stars) and moving to Sydney to lead the wine programme at Quay.

In May 2025 he joined the BiBi team, where he overseas all manner of beverage paired alongside modern Indian cuisine.
