Wines from famous Chateau’s, renowned and award-winning producers. But also wines from less known areas and young producers with a different view of winemaking are listed

Ayala Brut Majeur

Ayala, a smaller Champagne house that produces high-quality Champagnes in relatively low quantities.
Ayala has a rich history and was pioneer of producing drier Champagne.

It is fresh, but also has some depth and more complexity than other Champagnes because of the high percentage of Chardonnay, which makes it an exciting glass to drink on any occasion.

Chenin Blanc ‘Skaliekop’ 2021, Old Vine Project, David & Nadia

One of the greatest Chenin Blanc of South-Africa. A production of less than 2000 bottles of vines that were planted in 1985. The wine is salty, powerful, waxy of structure with great fresh acidity and made as pure as possible. A great alternative for Burgundy

Riesling ‘Cuvée The Dylan’ 2023, Bernhard Eifel

A Riesling from Trittenheim made by Bernard Eifel exclusively for The Dylan Amsterdam. The Riesling is dry, refreshing and fruity with a nice mineral undertone. A great wine for dinner or just by itself.

MEET THE WINE EXPERTS

Jasper van Amerongen & Virginie Kühn

Jasper started his journey in The Dylan back in 2018. After completing several wine educations he became part of the sommelier's team in 2022 to be responsible as of 2024 wine related tasks in the hotel.
Virginie joined the The Dylan team in 2022. After showing a lot of interest and passion about wine Virginie started and completed WSET Level 3. As of 2025 she became part of the sommelier's team.
