Inspired by its idyllic bayside setting, Amara at Paraiso brings together bold Latin American flavors, coastal ingredients, and South Florida’s diversity of food culture to create the quintessential Miami waterfront restaurant from environment to cuisine and vibe. Experience the dynamic energy, local ingredients, and natural beauty of Biscayne Bay that defines what living in Miami is all about.

We pour over 20 wines by the glass, each in 6oz, 9oz or bottle. The list leans Latin and Iberian: two from Uruguay’s Garzón, including the 2016 Balasto, plus Argentine Malbec, Vinho Verde, Basque txakolina rosé, Catalan sparkling and single-parcel Rioja. We also pour grapes rarely seen by the glass, like Piedmont’s Timorasso, next to classics like Sancerre and Champagne.

Amanda Fraga

Amanda Fraga, Beverage Director of The Genuine Hospitality Group since 2020, sees every glass as travel. After graduating from FIU in hospitality in 2011, she worked at The Setai and Lippi, then spent a 2014 harvest in Burgundy with Nicolas Potel at Domaine de Bellene. At TGHG she was sommelier at Michael’s Genuine and Amara, and her “Wine Wednesday” trainings teach the story behind each wine.
