Led by chef Dan Hunter, Brae is a restaurant, organic farm and boutique accommodation nestled in a hillside in the Otways hinterland. We create dishes uniquely of our place with respect and care, honouring the working lands on which we’re located. We’ve carefully designed your dining experience to complement an exploration of – and immersion in – the environment surrounding Brae.

The wines served at Brae are sourced from people with a passion for their craft, a deep respect for their land and a thoughtful approach to their processes.

41 wines are offered by the glass and served via Coravin. These are wines of distinction that tell a story of place, often produced with minimal intervention and always reflective of where they were grown and the people who’ve made them.

2023 Heroes Chardonnay / Otway HInterland, Victoria

Heroes vineyard is a 15 minute drive towards the ocean from Brae. Run by James and Eloise Thomas the focus is on cool climate grape varieties grown using regenerative viticulture techniques and without irrigation. This Chardonnay has great depth of flavour with crystaline purity of fruit, generous round texture from time maturating in oak barrels and balanced by fresh acidity. We are very proud to pour a beautifully crafted wine grown and made so close by.

2020 Cecile Tremblay ‘Côte d’Or’ Pinot Noir / Burgundy, France

A rare wine from a highly sought after producer; Cecile Tremblay has a cult following and for good reason. Meticulously and oragnically farmed fruit is sourced from parcels in Chambolle-Musigny and Vosne Romanée for this Bourgogne rouge. A captivating wine that hooks you immediately with its gorgeous fragrance and follows up with ripe, plush fruit on the palate, fine-grained velvety tannin and lively energy.

Lyndal Taylor

Lyndal Taylor is Brae’s Head Sommelier. She joined Brae in January 2022 and has over 20 years of hospitality service in Melbourne, the Mornington Peninsula and London, including five years at Melbourne’s 3-Hatted Attica, three of those as Assistant Restaurant Manager.
Lyndal has a depth of wine service knowledge and holds the WSET Level 4 Diploma.
